To Make Crust
• 2 cups graham cracker crumbs, finely crushed
• 3 tablespoons granulated sugar
• 5-6 tablespoons melted butter
To Make Filling
• 1 1/4 cups fresh lemon juice
• 4 extra-large eggs
• 2 extra-large egg yolks
• 1 cup granulated sugar
• 14-ounce can sweetened condensed milk
To Make Topping
• 1 cup heavy cream
• 3 tablespoon confectioner's sugar, sifted
• 1/2 tsp vanilla extract
• Graham cracker crumbs for garnish
1. Preheat oven to 350 degrees F.
2. Mix the graham cracker crumbs, sugar, and melted butter together in a bowl, blending everything together until all the crumbs are evenly moistened and there are no large lumps.
3. Press the crumbs evenly into the bottom and sides of a 9-inch deep-dish pie plate. Bake for 8 minutes.
